Piacenza – 2013

The purpose of the installation was to reduce / zero the bacterial content in the water, which recirculated at a temperature of 5

° C and served as a mozzarella governing liquid. The mission was to replace the microfilters with our system.

The circuit was composed as follows:

  • 1000 lt main accumulation filled with well water at 15 °
  • 25000 l / h
  • pump pressure 2 bar
  • 760 microsiemens of conductivity

To do this, an electric impulse unit was installed on the water supply duct to the machine for packing the mozzarella by bypassing the two mechanical micro-filters.

Results:

We passed from a bacterial load of 180 u.f.c./ml to a value of 1 u.f.c./ml.
